Ingredients
250 gms peeled and seeded pumpkin, cut small chunks
1/2 cup rocket leaves
1 clove garlic
2 tbsp extra-virgin olive oil
1 tbsp Lemon Juice
pine nuts, lightly toasted
1/4 cup feta
Ingredients
In a heated pan roast pumpkin with olive oil until tender and edges are brown
For dressing, peel roasted garlic and . Add lemon juice and remaining olive oil and whiz to combine.
Combine warm pumpkin with pine nuts, feta and fresh rocket leaves, then gently toss with dressing. Season to taste and serve.
