Ingredients

  • 1 avocado
  • 1/2 cup canned whole corn
  • 1 tomato (deseeded and cut in cubes)
  • 1/2 red onion
  • 1/4 cup kidney beans
  • 8-9 black Spanish olives
  • 2tbsp olive oil
  • 1tbsp  fresh lime
  • 1tsp garlic granules
  • salt and pepper

Ingredients

  • Wash and cut the avocado , tomatoes , red onion and cilantro . Keep everything separate.
  • Whisk lemon juice , olive oil , cilantro , garlic powder and salt in a small bowl.
  • Now toss together all veggies(not avocado ) with canned corn , kidney beans , salt and pepper.
  • Pour lime dressing over veggies and toss to combine.
  • Add avocado and toss gently so they don't mash together.
  • Serve immediately or refrigerate for 30 minutes .
