Ingredients
For the potatoes:
2 potatoes, peeled
Oil for frying
For the sauce:
1/4 cup extra-virgin olive oil
2 tablespoons minced garlic
1/2cup minced coriander
2 tbsp Paprika
Salt
parsley
fresh lemon juice
Ingredients
Cut the potatoes into half-inch cubes. Rinse under cold water until water runs clear. Drain and dry thoroughly on paper towels.
Pour oil into a deep fryer, or a large deep frying pan ,heat the oil. Set aside a baking sheet lined with paper towels. Working in batches if necessary , fry the potatoes until tender inside, and golden crisp outside.
Allow potatoes to cool to room temperature, Meanwhile prepare the sauce.
Place a large frying pan over medium-high heat. Add the extra-virgin olive oil, garlic, and coriander and cook for 1–2 minutes until the garlic starts to change colour. Add the lemon juice and the potatoes to the pan and toss lightly to coat. Season salt to taste and sprinkle with the paprika.. If desired, serve with sliced tomatoes or with fried, scrambled or poached eggs.
